La maggior produzione di Sylvaner in Alto Adige si estende nella Valle Isarco, da qui la denominazione d'origine controllata Valle Isarco. Tra i vigneti migliori dell'Alto Adige si noverano quelli di Chiusa e di Bressanone. Vitigno: Sylvaner. Sistema di coltura: pergola o controspalliera. Produzione media: 85q/ha. Alcol: 13,0 Vol %. Acidità: 6,2 gr/l. Estratto secco: 21,90 gr/l. Zucchero residuo: 2,7 gr/l. Caratteristiche organolettiche: vino bianco nobile gradevolmente fresco con corpo armonioso. Colore: da giallo chiaro a verdognolo. Profumo: delicato, caratteristico, fruttato di pesca, mela verde, albicocca. Sapore: secco, citrino, aromatico, fruttato. Tenuta all'invecchiamento: 2-3 anni. Prima annata di produzione: 1961. Numero di bottiglie prodotte annualmente: 150.000. Comuni di produzione: Bressanone, Chiusa, Velturno, Varna, Renon, Barbiano, Laion, Fié, Castelrotto, Funes, Villandro. Uve: 100% Sylvaner. Esposizione ed altimetria: pendio sud-est 400-700 m.s.l.m. Epoca e conduzione della vendemmia: fine settembre - ottobre; vendemmia a mano.

You look around and you wonder if it is the earth or the stone that takes care of these age old olive trees. Plants that grow on stony calcareous soil with good drainage at a perfect cultivation altitude; small-sized and low yielding, they are cared for and touched only by human hands. It can be used in many recipes: for sauteed creamy pasta and rice dishes, tuna marinade, shellfish au gratin and vegetable soup. Ideal with grilled radicchio, pinzimonio, artichoke salad with parmesan slivers, meat sauce and fishfry.
Winemaking: Guyot system. Harvested by hand in mid-September, just when the ripe grapes are turning color. Soft pressed - Brought to cold temperature to allow a separation of the sediment.
