Vinification: Delicate processing and crushing, controlled-temperature fermentation and ageing on fine lees in stainless steel tanks, no malolactic fermentation. Food pairing: Because of its minerality and liveliness it is an excellent aperitif; it also goes well with first courses, fish and white meats. Serving temperature: 8 - 10°C. Full yellow in colour; a deliciously intensely aromatic and floral bouquet with hints of honey and ginger with a flavour of lychees; full-bodied, luscious but dry, the opulence cut by vibrant, firm acidity.
A clean, concentrated floral nose reminiscent of elder and acacia flower with ah hint of sage, leads to a fresh, distinctive palate with nicely rounded fruit, light oak spice and a crisp finish. Enjoy it with a snack of fresh goats' cheese and smoked salmon pâté with crusty bread, or as a partner for lobster tail salad, full-flavoured fish dishes, scallops stir-fried with ginger, or goats' cheese soufflé.
